To learn more about their gastronomic endeavors and the future of food, designboom had the opportunity to speak to the CIO of Plat Institute, Nacho De Juan-Creix.

Plat Institute, established in 2015, is a platform where creativity, innovation, and knowledge combine with technological singularity to disrupt the future of food. They work with multidisciplinary professionals and specialize in emerging disciplines of food, such as food design, food tech, social food, sustainability, and circularity. As an observatory of futures, Plat Institute stays up to date with society’s changes, scientific advances, and new trends. With this knowledge, they develop studies and research papers that serve as foundations and guides for innovation, future projects, product development, ecological transitions, and more.

Plat Institute consists of two main pillars: the Sci-Fi Food Lab and the Institute. The Sci-Fi Food Lab focuses on research, disruptive innovation, and exploring the commercial potential of creativity. They use design fiction and cutting-edge technologies to inspire the science of tomorrow and work on seemingly impossible ideas. This lab creates tangible ideas like Augmented Packaging, Interactive Points of Sale, G-Astronomy Dinners, and Immersive Innovation Safaris.

Interestingly, the lab also creates actual dishes. With expertise in emerging disciplines such as food design, food tech, and sustainability, Plat Institute enhances the perception and enjoyment of food by creating designs for food objects and unique culinary dishes that spark thought and reflection.

One of their notable endeavors is the ‘Edible Cloud,’ a concept that brings the outer space experience into the consumer experience of today. The Sci-Fi Food Lab explores floating food through technologies like magnetic levitation, acoustic levitation, and gases. After much learning and experimentation, they developed a technology that safely encapsulates helium in edible foams.

Plat Institute shares a common interest with professionals in the field of gastronomy: 3D printing and its applications in the world of food. The team at Plat Institute uses the latest technologies, including 3D printers, to create architectural imaginaries, scenarios, and products. They work with organic waste to develop bio-composite filaments and explore the use of bio-polymers like Limonene to create bioplastics. Additionally, they utilize marine food waste, such as mussel shells, oysters, and scallops, to produce bio composites like porcelains. Another area of research is glass, where they crush used glass bottles to create sand for designing new tableware.

In the summer of 2023, Plat Institute launched the FarmFoodLab project, dedicated to food and energy sovereignty. Located in the Empordá region of North Catalonia, the FarmFabLab spans over 30,000 square meters and focuses on researching and developing food and health innovation, material flow, and circular design. This project aims to explore topics such as the kitchen of the future, cooking with one’s own energy, zero waste solutions, regenerative and biodynamic agriculture, user experience, video games, and food delivery.
